Ingredients required for making Caramel the Apple cupcakes:
1/2 cup butter softened at room temperature
1 cup white castor sugar
1 cup firmly packed dark brown sugar
2 eggs large
1 teaspoon pure vanilla extract
2 cups all-purpose wheat flour
1 teaspoon baking soda
1 teaspoon salt
2 teaspoon groundd cinnamon powder
4 large apples, peeled and chopped
Vegetable cooking spray
For the Caramel Frosting:
1 cup butter room temperature
1 package dark brown sugar
1/2 cup milk
1/4 teaspoon baking soda
1 tablespoon light corn syrup
4 cups confectioner's sugar
STEPS TO FOLLOW TO MAKE APPLE CARAMEL CUPCAKES
Preheat oven to 350 degrees. Stir together first butter.sugar,brown sugar,eggs and pure vanilla extract in a large bowl until well blended. Combine the flour,baking soda,salt and cinamon powder together and add to the butter mixture stirring continously until blended. Stir in the chopped apples. Line the cupcake pans with paper liners and coat with cooking spray; spoon the cupcakes batter into cups, filling about two-third full. Bake for about 12 to 15 minutes or until a wooden pick inserted in center of the baked cupcake comes out clean. Cool in pans on wire racks for about 10 minutes; remove from pans to wire racks, and cool completely.
To make the frosting, melt butter in a heavy saucepan over medium heat. Add the brown sugar to it and bring to a boil, stirring constantly. Stir in the milk, baking soda, and corn syrup and bring to a boil.Now Remove from heat, and allow it to cool completely. Transfer it in to a large bowl. Gradually add confectioner's sugar to caramel mixture 1 cup at a time , beating at medium speed with an electric beater until blended. Beat at high speed until creamy. Use immediately to frost on the cupcakes.
