You are required to cook about 350 grams of pumpkin for
making this pudding. Pudding can be made a week in advance. Keep it covered in
the refrigerator.
Ingredients required for making this pudding are
11/2 cup wholemeal plain flour
1 teaspoon mixed spice
1 teaspoon grounded ginger
1 cup stale wholemeal breadcrumbs
1 cup dates chopped
½ cup raisins chopped
½ cup dried apricots chopped
60 grams of butter
1/3 cup of honey any brand
1 cup of cold mashed pumpkin
2 eggs beaten lightly
PREPARATION METHOD
Sift flour and spices together in a large bowl. Stir in the
stale breadcrumbs and the chopped dry fruits. Combine honey and butter in a
small saucepan and stir over low heat until the butter is completely melted.
Stir honey mixture in a bowl with mashed pumpkin and beaten eggs. Spoon the
mixture into a well greases streamer (7 cup capacity), cover tightly. Place
pudding in a large boiler with enough boiling water to come half way up to the
side of the streamer. Cover tightly. Boil for about 2 hours adding more boiling
water as it evaporates during the cooking time. Serve.
