Blueberry muffins
 INGREDIENTS
2 cups sifted flour
1 cup fresh or frozen blueberries
4 teaspoon baking powder
1 egg, beaten
1/2 teaspoon salt
1/4 cup melted shortening
1/2 cup sugar
1 cup low-fat milk
METHOD FOR MAKING THE BLUEBERRY MUFFINS
Grease the muffin pans
In a large bowl mix all  the dry ingredients and sift them. Stir in the fresh blueberries; and add the beaten egg, shortening and the low fat  milk and whisk thoroughly.

Pour the muffins batter into the greased muffin pans about 2/3 full.

Bake in a moderately hot oven,at 400 degrees F, for about 20-25 minutes.

apple muffins
INGREDIENTS

31/2 CUPS  FLOUR

1 CUP SUGAR

½ CUP DRY BUTTERMILK POWDER OR DRY NONFAT MILK POWDER

1 TABLESPOON OF  BAKING POWDER

½  TABLESPOON OF BAKING SODA

½ TABLESPOON OF SALT

½ TABLESPOON GROUNDED CINNAMON

½ TEASPOON GROUNDED NUTMEG

3-4 EGGS

3 TEASPOONS OF VANILLA EXTRACT

2 CUPS WATER

1 CUP APPLESAUCE

METHOD

PREHEAT OVEN TO 400 DEGREES

Coat the muffin tin with cooking spray

In a bowl combine all the dry ingredients flour,sugar.milk powder ,baking powder,baking soda,salt,cinnamon and nutmeg.in case any lumps are formed break them.set aside

In another bowl  beat the eggs with the electric beater.now add in the vanilla extract and beat.After this add the water and Apple sauce to this well beaten egg mixture and beat on low speed till all the ingredients are well mixed.Now using a spoon gently stir in the combined dry ingredients mixture into this wet mixture just  until moistened.The batter should be lumpy.Fill the muffin tins with this prepared  batter full.Bake for about 15-20 minutes or until the top of the muffins is golden brown.Allow to cool in the oven in the muffin tin for a few minutes before removing the muffins from the tin

cherry muffins
INGREDIENTS
3 cups of all-purpose flour
1 Tbsp baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
10 Tbsp unsalted butter, softened
1 cup castor sugar
2 large eggs
1 1/2 cup plain yogurt
1 teaspoon grated lemon peel
1 1/2 cups CHERRIES dried
1 Tbsp flour
METHOD
1 Preheat THE oven to 375°F.

2 In a large bowl Whisk the flour, baking powder, baking soda, and salt together and set aside.

3 In another large mixing bowl, cream the butter and sugar together with a beater beating until fluffy. Add eggs one at a time, beating till well combined after each one. After this Beat in the grated lemon peel.
Whisk in one half of the dry ingredients  and beat well until just incorporated.Now whisk in one third of the yogurt.add and beat  in half of the remaining dry ingredients. Now whisk in a second third of the yogurt. mix in the remaining dry ingredients and then the remaining yogurt.Beat only until just incorporated.Do not overbeat the batter. Using a spoon Fold in the Cherries.

5 Grease the muffin pan with a little butter. Divide the muffin batter equally among the cups. Bake until the muffins are slightly golden brown for about 30 minutes. Test with a long toothpick  to make sure the the muffins are done. Set on wire rack to cool for a few minutes. Remove muffins from the cups and serve warm.
Nutty butty muffins
MAKES 12-MUFFINS

1/2 cup. (1 stick) butter - softened
1 cup granulated sugar
2 large eggs (well beaten)
1 tsp. pure vanilla extract
2 large bananas, ripe - mashed
2 cup all purpose flour
1 tsp. salt
1 tsp. baking powder
1/2 tsp. baking soda
1 cup. buttermilk
1/2 cup. chopped walnuts 
Nutty butty MUFFINS RECIPE
Preheat the oven to 400 degrees F and line a 12-cup muffin pan.
In a medium bowl with an electric beater, cream the  butter and sugartogether. Beat till the mixture is light and fluffy.
Add in the well beaten eggs and vanilla extract and beat well with a beater, then add the mashed bananas and beat until the batter is completely smooth.
whisk  the flour, salt, baking powder and baking soda in another bowl and mix together the dry ingredients.
Now Add the flour mixture and buttermilk to egg mixture and beat lightly till  the dry ingredients are slightly moistened.Mix in the walnuts.
Spoon batter into the greased muffin pan, so that each cup is about 2/3 full.
Bake for about 18 minutes at 400 degrees  or until the muffins are golden-brown.
Cool muffins for a few minutes in the pans before removing them on wire rack.
chocolate chip muffins
   CHOCOLATE CHIP  MUFFINS.

11/2 CUP COCOA POWDER

3 CUPS MINI CHOCOLATE CHIPS

METHOD FOR MAKING CHOCOLATE CHIP MUFFINS

PREHEAT OVEN TO 400 DEGREES

In a bowl combine all the dry ingredients flour,sugar.milk powder ,unsweetned cocoa powder, baking powder,baking soda,salt,cinnamon powder and nutmeg.in case any lumps are formed break them.set aside

In another bowl  beat the eggs with the electric beater.now add in the vanilla extract and beat.After this add the water and butter or oil to this well beaten egg mixture and beat on low speed till all the ingredients are well mixed.Now using a spoon gently stir in the combined dry ingredients mixture into this wet mixture just  until moistened.After this spoon in the chocolate chips into the batter and mix gently.The batter should be lumpy.Fill the muffin tins with this prepared  batter full.Bake for about 15-20 minutes or until the top of the muffins is golden brown.Allow to cool in the oven in the muffin tin for a few minutes before removing the muffins from the tin
