BLACK BOTTOM CUPCAKE RECIPE
Ingredients
Filling:
8 ounce cream cheese, softened room temperature
1 egg room temperature
1/3 cup white granulated sugar
1/2 cup chocolate chips
Cupcakes:
1 1/2 cups flour
1/2 cup white granulated sugar
1/2 cup brown sugar,
1/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon instant coffee espresso
powder
a pinch of salt
1 cup water
1/3 cup canola oil
1 tablespoon apple cider vinegar
1/2 teaspoon vanilla extract
Cream
Cheese Frosting
4 tablespoons butter,
softened room temperature
6 ounces
cream cheese, softened
4 cups confectioner's sugar, sifted
1 teaspoon vanilla extract
BAKING INSTRUCTIONS
Preheat the oven to 350 degrees.
Line a cupcake pan withpaper liners
Method for the filling:
In a medium bowl, beat the cream
cheese, egg, and granulated sugar together with an electric beater at high speed until light and fluffy. Using a spoon Stir in the chocolate
chips. keep aside.
Method for the cupcakes:
In a large bowl, with a spoon mix together
all the dry ingredients the flour, sugars, cocoa powder, baking soda, espresso powder, and salt. Make
a well in the center.Now into this well Add the water, canola oil, cider vinegar, and vanilla extract Now mix all the ingredientsr until they are well incorporated. Now spoon this prepared batter into the lined cups about 1/3
full. ANow add a teaspoon of the cream cheese filling on top of the
batter in the center. Bake at 350 degrees for about 20-25 minutes or until the filling has
set and the cupcakes are springy to touch.Allow the cupcakes to Cool on
a wire rack.
Method for the cream cheese
frosting:
In a large bowl Place the butter, cream cheese, confectioner's sugar, and vanilla extract and beat at medium speed until the mixture is super light and creamy. Frost the cooled
cupcakes with this prepared frosting and garnish with mini chocolate chips.
