VEGAN PEANUT BUTTER CHOCOLATE CHIP COOKIES
1/2 cup honey
1/3 cup brown sugar
1/2 cup margarine
1/2 cup crunchy peanut butter
1/2 teaspoon pure vanilla extract
1 cup rice flour
3/4 cup Quinoa Flakes
1 teaspoon baking soda
dash of salt
1/2 cup Vegan chocolate chips

BAKING METHOD
Heat the oven to 350 degrees. In a large bowl beat the
honey, brown sugar, margarine, peanut butter, and vanilla extract together at
low speed until creamy. Combine all the dry ingredients rice flour, quinoa
flakes, baking soda, and salt in a small bowl .Add the dry ingredients mixture
to the creamy mixture and beat well with a beater until well blended. Using a
spoon fold in the vegan chocolate chips. Drop by rounded teaspoonfuls about two
inches apart onto ungreased cookie sheet. Bake for about 10 minutes or until the
cookies are light golden brown. Cool for 2-3 minutes before removing from the cookie
sheet.
