600 ml milk
½ teaspoon vanilla extract
5 egg yolks
300 ml chilled whipping cream
2 ounce oatmeal
2 ounce granulated sugar
100 grams of vanilla sugar (to make vanilla sugar place3-4
vanilla pod in a jar of sugar, shake well and keep for a few hours)
METHOD
In a saucepan, place the milk and bring the milk to just
boiling point.
Take a bowl and beat together the egg yolks and sugar until
it is thick, then add in the hot milk. Now place this pan over a pan of
simmering water like a double boiler and using a spoon continue to stir till
the mixture thickens like custard. Allow this custard mixture to cool. Once the
mixture has cooled, add vanilla extract to it and transfer this thick custard
mixture to a freezer tub or container and freeze until the mixture is partially
frozen.
Meanwhile to caramelize the sugar, place the oatmeal and the
granulated sugar in a heatproof tray and toast in a preheated grill till the
sugar has caramelized. Break into large size crumbs with the help of a fork;
allow cooling and chilling in the refrigerator for about 40 minutes,
In a bowl, beat the whipping cream till it forms soft peaks.
In a big bowl Beat in the partially frozen custard mixture,
fold in the caramelized oatmeal followed by adding the whipped cream.
Place in the freezer container and freeze for about 1 hour.
Remove from freezer, beat again to break the frozen crystals and put it back in
the freezer to freeze until mixture is firmly set.
