CHOCOLATE CHIP COOKIES WITH NO EGGS

1/2 cup unsalted butter softened at room temperature 1/2 cup firmly packed brown sugar   1/3 cup white granulated sugar   1/2 tsp vanilla   extract 3 Tbsp water   1 cup all purpose flour   3/4 tsp baking soda   a pinch of salt   1 cup semi sweet chocolate chips   METHOD FOR MAKING CHOCOLATE CHIP COOKIES WITHOUT EGGS   In a large bowl Beat the softened butter, brown sugar and white sugar together until well blended   and creamy. Now beat in the water and pure vanilla extract and beat till the mixture is smooth. In a small bowl combine the flour, salt and baking soda together. Stir in the flour mixture into the well beaten butter mixture and whisk till all the ingredients are well combined.Using a spoon gently fold in the semi sweet chocolate chips. CHEWY CHOCOLATE CHIP COOKIE RECIPE FOR THE CHOCOLATE CHIP LOVER COOK

INGREDIENTS-MAKES AROUND 60 COOKIES 2-1/4 cups all-purpose flour  1 teaspoon baking soda  dash of  salt  1 cup  butter, softened  3/4 cup white  granulated sugar  3/4 cup packed light brown sugar  1 teaspoon pure vanilla extract  2 eggs large room temperature  2 cups  Chocolate Chips  Directions for making chewy chocolate chip cookies 1. Heat the oven to 375°F. 2. In a small  combine all the dry ingredeients together-all purpose flour, baking soda and salt. In a large bowl using an electric beater Beat butter, granulated sugar, brown sugar and vanilla extract together until the mixture has turned creamy. Now Add the  eggs one at a time  beating well after each addition.Now  Gradually add in the  flour mixture spoon by spoon and beating well.Gently using a spoon fold in the  chocolate chips . CORN AND PEANUT BUTTER MUFFINS FOR THE WEIGHT WATCHER COOK

MAKES 12     11/2 cups wholemeal self raising flour 11/2 cups self raising flour ¼ cup white castor sugar 60 grams butter 1 cup milk 300 grams creamed corn ½ cup crunchy peanut butter paste 2 large eggs lightly beaten METHOD Grease a 12 muffin pan .In a bowl sift the two flours and sugar. Rub in the butter and make a well in the centre. In another bowl combine the wet ingredients that are the eggs, milk, peanut butter paste and creamed corn. Add the wet mixture into the flour mixture mix with only fork until the ingredients are well combined. Pour the prepared muffins batter into the greased muffin pans.Bake at 180 Degrees C or 375 Degrees F for about 20 minutes or until the muffins are very lightly browned

NO BAKE CHOCOLATE PEANUT BUTTER OATMEALCOOKIES

INGREDIENTS 2 cups white granulated sugar   6 teaspoons unsweetened cocoa  powder 1/2 cup milk   1 stick butter  melted room temperature 4 tablespoons peanut butter   1 teaspoon pure vanilla  extract 3 cup quick cooking oats COOKING METHOD   In a medium saucepan combines sugar, cocoa, milk and butter together. Bring to a boil and cook for about 1-2 minutes. Remove from heat. Allow the mixture to stand for about a minute. Then add in the peanut butter, vanilla extract and cooking oats to it and stir well.  Place a large sheet of wax paper and drop little spoons onto the wax paper.  Allow it to cool.

BREAKFAST BARS FOR THE COOK

DATE BARS 125 grams of butter ½ cup of brown sugar 1 cup chopped dates ¾ cup water ¾ cup whole-wheat plain flour ¾ cup self raising flour ½ cup of bran (unprocessed) 2 eggs large lightly beaten 1 teaspoon vanilla extract COOKING METHOD For making these date bars you need a 25cmx30 cm roll pan. Line the base of the pan with paper and grease the paper. Now in a saucepan place the brown sugar, butter, water and the dates and stir over low heat till the sugar has dissolved. Bring to a boil, remove from heat and allow cooling. In a bowl, sift the plain flour and self raising flour, now add the bran to it and mix well. Now mix in the beaten eggs, vanilla extract and the boiled date’s mixture. Spread this mixture into the lined pan. Bake in an oven at 180 DEGREES C/375 DEGREES F for about 30 minutes or till it is golden brown in color. Strawberry Bars Ingredients 1 cup butter or margarine, softened 1 1/2 cups sugar 2 eggs 1 teaspoon grated lemon peel 3 1/4 cups all-purpose flour 3/4 cup slivered almonds, chopped 1 teaspoon baking powder 1/2 teaspoon salt 1 (12 ounce) jar strawberry preserves Directions 1.In a large mixing bowl, cream the butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in lemon peel. Combine 3 cups flour, almonds, baking powder and salt; gradually add to creamed mixture until mixture resembles coarse crumbs (do not over mix). 2.Set aside 1 cup of dough. Press the remaining dough into a greased 15-in. x 10-in. x 1-in. baking pan. Spread preserves to within 1/4 in. of edges. Combine the reserved dough with the remaining flour; sprinkle over preserves. Bake at 350 degrees F for 25-30 minutes or until lightly browned. Cool on wire rack. Cut into bars.

EASY PEANUT BUTTER LOAF RECIPE FOR THE DIABETIC COOK

125 grams butter ½ cup honey 3 eggs 1/3 cup peanut butter paste 1 cup self raising flour(sifted) ¾ cup wholemeal plain flour(sifted) ½ cup buttermilk METHOD Grease a 14cmx21cm loaf pan with paper and grease the paper. In a large bowl with a beater cream the butter until it is light and fluffy. Now add honey to it and beat well again. Beat in the eggs 1 at a time beating well after each addition. Then beat in the peanut butter. Now whisk in the sifted flours and buttermilk in 2 batches. Pour the prepared loaf mixture in the loaf pan and bake in the oven at 180 Degrees C or 375 Degrees F for about 30 minutes or till it is firm. Allow the loaf to stand for about 5-8 minutes before turning onto the rack to cool completely. Cut into slices and enjoy

HEALTHY OATMEAL APPLE PIKLETS FOR THE DIABETIC COOK

Makes 20 PIKLETS 1 cup self raising flour 1 teaspoon grounded cinnamon 11/2 tablespoons brown sugar 2/3 cup rolled oats 1 egg large beaten lightly 11/4 cup soya milk 1 apple medium size grated ½ cup chopped walnuts METHOD In a small bowl combine the beaten egg and soya milk In a large bowl sift the flour and cinnamon .Add in the rolled oats and brown sugar and stir well.Make a well in the centre.Gradually stir in the combined egg and soya milk.Now mix in the grated apples and nuts.Cover the bowl and allow it to stand for 10 minutes Heat a frying pan and lightly grease it with butter.Drop tablespoons of the prepared mixture into the pan from the tip of the spoon.When bubbles appear turn over the piklets and cook until lightly brown in color underneath.

HEALTHY APRICOT APPLE BARS FOR THE DIABETIC COOK

1 Medium apple ,grated 11/2 cups wholemeal plain flour 100 grams rolled oats ¾ cup chopped dried apricots ½ cup slivered almonds ¼ cup sesame seeds ¼ cup honey 125 grams butter 1 teaspoon grated lemon rind 1 tablespoon lemon juice 1 tablespoon brown sugar METHOD Grease a 25 cm x 30 cm swiss roll pan. Line the base of the pan with paper and grease the paper. Squeeze excess moisture from the grated apples. In a large bowl sift the flour ,stir in the apple, oats, apricots, almonds and sesame seeds. Make a well in the centre. In a saucepan over low heat combine the honey, butter, lemon rind,lemon juice and brown sugar without boiling stirring until the sugar has dissolved.Now stir this mixture into the flour mixture.Press the mixture evenly into the prepared swiss roll pan.Bake in the oven at 180 Degrees C OR 375 Degrees F for about 35 minutes or until golden brown.Cool in pan before cutting into bars.
