Black Bean Brownies
INGREDIENTS
1 can of black beans, rinsed and drained
3 eggs room temperature
3 tablespoons of vegetable oil
1/4 cup unsweetened cocoa powder
1 pinch salt
1 teaspoon pure vanilla extract
3/4 cup white sugar
1 teaspoon instant coffee (optional)
1/2 cup milk chocolate chips (optional)
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C). Grease a baking dish.
In a blender place the black beans, the eggs, vegetable oil, cocoa powder, salt, vanilla extract, sugar, and instant coffee together and blend all these ingredients until the batter is completely smooth. Now pour the batter into the prepared baking dish. Sprinkle some chocolate chips and instant coffee powder over the top of the batter.
Bake in the preheated oven for about 30 minutes until the top is dry and the edges start to pull away from the sides of the baking dish pan. serve
