This
beautiful dessert is very easy to make and requires no cooking at all.

butter, melted
Ø 3/4 teaspoon
grounded mixed spice
Ø 1 teaspoon of
gelatine
Ø 3 tablespoons of
boiling water
Ø 150 grams of lemon curd
300 ml.of double cream, whipped

Ø Grease an 8 inch flan tin
Ø Crush the digestive biscuits with
a rolling pin.
Ø Now in a bowl Mix together
the crushed biscuits, melted butter and
the mixed spice
Ø Press this mixture into the
bottom and sides of the flan tin and chill in the refrigerator for about10-12 minutes
Ø In a small bowl Dissolve the
gelatine in the boiling water
Ø Allow the gelatine to cool a
little. Beat in the lemon curd into the gelatine.
Ø Fold in the whipped cream into
the gelatine-lemon curd mixture and pour
the filling into the biscuit crust
Ø Place in the refrigerator for
about 5 -7 hours, until the filling has
set
