LEMON BISCUITS
250 Grams plain flour
100 grams butter melted
100 grams sugar
1/4 teaspoon lemon extract/essence
Rind of 1 grated lemon peel
1 large egg
METHOD
In a bowl sieve the flour.
In another bowl with a beater cream the butter and sugar
together till it is light and creamy.
Now beat in the egg and lemon rind to the creamy mixture.
Add lemon extract and beat well.Now add the sieved flour mixture to it and make
it into firm dough.
Roll out the dough thinly and prick all over it with a fork.
Now cut into rounds using a biscuit cutter.Grease the baking tin and Place the
biscuits on it.Bake in the oven for about 15-20 minutes at 350 Degrees F.Serve hot.
MINI CHOCOLATE CAKES
2 Large eggs well beaten
1tablespoon unsweetened cocoa powder
175 Grams plain flour
1 teaspoon baking powder
110 grams butter melted
100 grams sugar
½ teaspoon vanilla extract
Glazed cherries for decorating
For the filling
11/2 tablespoon butter melted
4 tablespoons icing sugar
21/2 tablespoons cream
COOKING METHOD
In a bowl sift the flour, baking powder and cocoa powder together.
Set aside.
In a bowl with a beater cream the butter and sugar
together till light and creamy, add the beaten eggs little by little and
continue beating. In case the mixture curdles while beating, add a little flour
to it.
Now fold in the flour mixture and water only little to get
a dropping consistency. Now add the vanilla extract to it and mix well.
Line a tiny cakes pan with paper and pour the prepared
cakes batter into it about ¾ full bake in a preheated oven for about 15-20
minutes at 400 degrees F.
Allow the cakes to cool completely.
Meanwhile mix together all the filling ingredients well. Once
the cakes have cooled. Remove from the oven and with a spoon scoop out a little
from the centre of each cake and fill the hole with the filling. Cover the top
of each of the cakes with glazed cherries.
CHOCOLATE FUDGE
1can of condensed milk
½ cup sugar
21/2 cups (480 ml) milk
1 teaspoon vanilla extract
2 tablespoons butter melted
4 square of semi sweet chocolate 2 tablespoons cocoa
powder
Method
In a pan mix the condensed milk, sugar, milk, cocoa powder
and chocolate squares and mix and put the mixture to boil over low heat. Once
the mixture starts to boil add in the butter to it. Constantly stir the mixture
and cook it until it becomes very thick. (.Now to test the correct consistency takes
a teaspoon of the mixture and drop it into a cup of cold water.the mixture will
take the shape of a ball.remove it from the water and throw the ball on a place
if it makes a sound ,it means the mixture is right in consistency.)
Remove from heat and add the vanilla extract to it. Spread
this mixture on a well greased tin. Leave for a few minutes .cut into squares
and serve.
