Grapefruit
sorbet
INGREDIENTS
3
oz of white granulated sugar
½
pint water (300 ml)
Rind
of 1 grapefruit finely grated
300
ml of grapefruit juice
2
egg whites
COOKING
INSTRUCTIONS
In
a pan over low heat place the sugar and water and stir constantly till the
sugar has completely dissolved. Bring the mixture to a boil till it is half in quantity.
Set aside to cool. Now add in the grapefruit juice and grapefruit rind to the
sugar syrup and stir .Now put this mixture into the freezer for about 11/2 -2
hours till the mixture is frozen partially.
Now
using a beater beat the egg whites till they are stiff. Now beat frozen mixture
to break the ice crystals. Fold this crushed grapefruit ice mixture into the
beaten egg white mixture and freeze till firmly set. Serve in chilled glasses
PEAR
SORBET
½
kg ripe pears, peeled, cored and sliced
2
tablespoons of lemon juice
3
tablespoons of sugar
2
egg whites
COOKING
INSTRUCTIONS
In
a saucepan place the pears along with the lemon juice and sugar and allow it to
simmer over low heat till the pears has softened and the sugar has dissolved.
In
a food processor puree the pears. Let the puree cool completely, place the
cooled puree in the freezer and freeze for about 11/2 hours till the mixture is
partially frozen.
Now
in a separate bowl beat the egg whites with a beater till stiff. Meanwhile
remove the frozen pears mixture and beat to crush the crystals. Now fold in the
stiff beaten egg whites mixture to it and freeze till firmly set. Serve in
chilled glasses.
LIME
SORBET
100
grams of granulated sugar
1
pint water
1
thinly peeled lemon
3
tablespoons of lime juice
2
egg white.

INSTRUCTIONS
In
a saucepan place the sugar, water and lemon peel and stir it constantly over
low heat till the sugar has dissolved completely and bring it to a boil till
the mixture is half in quantity. Set aside to cool
Now
add the lemon juice to this sugar syrup and place the mixture into the freezer
to freeze for about 1-2 hours till the mixture is half frozen.
In
another bowl beat the egg whites till they are stiff. Also remove the frozen
mixture from the freezer and beat it to crush the frozen crystals. Fold in the
egg white mixture to this crystals mixture and freeze in the freezer till it is
firmly set. Serve in chilled glasses. You can even garnish with lemon rind.
